I see these two words used in different places within the application and documentation. What is the difference between them and how do I get to each? I can find tickets within a project, but where do I find tasks?

Tickets are "big" tasks that can be associated with milestones, support attachments, comments and more. They are so feature rich that some people use them as subprojects.

Tasks are smaller steps in execution of a bigger task. They never stand alone, instead they are attached to other object such is checklist, ticket or a page. Check out the screenshot I've attached to this message. Here we have a ticket broken into many tasks that are executed one by one. When we complete all tasks ticket will be closed.

Could it be that the online demo is the older version without tasks, or that functionality is switched off? I just see the tickets which live below projects in the hierarchy.

Yes, online demo is slightly older than current version available for purchase (1.0.4 compared to actual 1.0.6), but tasks are available there as well. When viewing a ticket, just take a look at the menu on the right and you will notice "New Task" item.
