I think it'd be really cool to see when a milestone is rescheduled - this would allow clients/staff to see how often a milestone's due date was changed, and who changed it.

However this history should not be only on "due date" but on all milestone "attributes".

Right.
I like the way WIKIs (e.g. Trac) show the history, changes, diffs.
This way it's much easier to do a "project audit". Of course, not every user role should be allowed to see the history.
