this been said, i have contractors with " add only " restricted access who still need to add a new task from time to time.
Could we have this too ? i mean, only allow them to add data in, not edit data.

Adding tasks to tickets is treated like edit operation (you are basically updating ticket with additional data), so user needs edit permissions to be able to add data to the ticket.
